A Simple Gluten-Free Dough I Use for Everything
I went to pastry school and also studied nutrition, so I naturally like to adapt recipes to make them both gluten-free and a little healthier whenever possible. Over the years, I have spent a lot of time experimenting with gluten-free baking, especially when it comes to simple, versatile doughs that actually work.
This gluten-free dough recipe is one of my go-to basics. It is quick to make, easy to work with, and can be used for so many different things. I use it for tortillas, flatbreads, pizza bases, and even quick biscuits, depending on how I shape and cook it. If you want an easy gluten-free dough that does not require complicated steps or ingredients, this one is hard to beat.

Gluten-free Dough Recipe
This is a recipe adapted from Tasty. I sub in some chickpea flour to add a little more protein and reduce the carbs. But you can use all 2 cups of all-purpose if you would like.
Ingredients
- 1.5 cups all-purpose gluten-free flour (this can also be made with regular flour if you aren’t gluten-free)
- 1/2 cup chickpea flour
- 1 tablespoon baking powder
- 1/2 teaspoon Salt
- 1 cup plain yogurt
- Optional seasonings- as desired
How to Make the Dough (step by step)
Mix together the flours, baking powder, salt, and seasonings (if using) in a bowl.
Add yogurt and mix by hand until a dough forms. It can get pretty sticky, but continue kneading until it’s well combined. Add more all-purpose flour if needed, a little at a time, and incorporate fully.
What You Can Make with this Gluten-Free Dough Recipe
I use this multi-purpose dough for so many things:
- Naan or tortillas- Flatten them out in a tortilla press or roll them out with a rolling pin to make either a naan replacement or go a little thinner, and they come out like my grandma’s flour tortillas. You might need more flour to stop them from sticking. Cook on a cast-iron skillet for a few minutes on each side
- Biscuits– Form them into biscuit shapes and bake them at 350°F (180°C) for about 10 minutes. I use the biscuits as buns for burgers or sandwiches. Slice them in half and toast them on a pan. They will be a little crumbly, but they are delicious.
- Pizza Dough– Roll it out and use it as pizza dough. Bake it at 375°F (190°C) for about 7 minutes then add toppings and bake another 5-10 minutes or until your liking
- Donut Holes- roll them into small balls then air-fry for about 10 minutes. Take them out and roll in cinnamon-sugar.
- Sweet Bisquits- add some sugar or sugar replacement (I like Stevia), cinnamon, and vanilla and then bake for about 10 minutes to make strawberry shortcakes.
Variations You Can Try
Go crazy with this dough! Add your favorite spices or flavorings. Bake, air-fry, or cook on a skillet. I like adding garlic for pizza dough or garlic naan.
Tips for Best Results
- Add enough flour until it’s no longer super sticky. Amounts can vary depending on humidity levels.
- When I make biscuits, I like to slice them in half and toast the inside
- If the dough sits while forming portions, cover the bowl with a wet paper towel so the dough doesn’t dry out.
- For a softer texture, brush with olive oil before baking or cooking
- They can be made ahead of time. If they seem dry, wet them a tiny bit before you reheat. The water will create steam and make the inside moist. I like to reheat in the airfryer or skillet if flat.
